America isn’t all fast-food and potato chips; they also do Gumbo – well in the south they do. Gumbo is a traditional meat or fish stew that originated in southern Louisiana in the 18th century. Typically served with rice and packed full of rich cajun spices, a good Gumbo is like a fine wine – with chunks. Our local pub just happened to have a Gumbo cook-off this weekend – five hours of great beer and great food!
